MAPLE OATMEAL WITH TOASTED PECANS & SEA SALT.

Sometimes life calls for a little R&R, even if it’s a Thursday morning and you’re just staying in bed for half an hour longer. This usually happens when I’ve been going non-stop on a ten day work bender, and still don’t see much light at the end of the tunnel. The way to keep a spring in your stride on a never ending journey is to pace yourself and acknowledge that there is only so much you can handle in one go. I like to treat myself with some morning ‘me’ time. That means I’m equipped with a bowl of luxuriously tasty oatmeal spending some quality time with those silly sea creatures, Spongebob Squarepants and Patrick Star. This is necessary time that makes a world of difference in how you approach the day ahead. So hang in there folks! It’s almost Friday right?

Maple Oatmeal with Toasted Pecans & Sea Salt

You will need:

3/4 cup rolled oats (organic if you can get your hands on ’em)
a pinch of salt
1 1/4 cup of water

a handful of pecans
1/4 tsp cinnamon
your choice of a knob of grass fed butter / coconut milk / milk / almond milk / rice milk to serve
sea salt
pure maple syrup to sweeten to taste

Throw your oats in a saucepan with the water and a pinch of salt. Place onto the stove over a medium heat, and stir often to prevent the oats from sticking to the bottom. After about 10-12 minutes of cooking, you should have creamy oats without having added any milk or cream. Meanwhile, in a small pan, toast your pecans on a high heat, shaking the pan every 30 seconds or so to toast your nuts evenly. Once they are crispy, turn off the heat.

Transfer your oatmeal to a bowl, and scatter the pecan nuts over the top (you might like to crush them into smaller pieces with your hand now that they are toasted). Dust with the cinnamon, drizzle your maple syrup over the top, sprinkle on some coarse sea salt, and add your milk or knob of butter just before you tuck in to eat it.
