PTJ’S CLASSIC FRUIT SALAD.

This is my go-to tropical fruit salad that sometimes weirds people out a little, but never fails to impress. It’s a dreamy marriage of coconut milk, sea salt, sweet papaya, and fresh mint. What can I say? Everything just works! And don’t knock it before you try it!

PTJ’s Classic Papaya Fruit Salad (serves 2 hungry campers)

You will need:
1 medium sized papaya (I like to use Holland or Hawaii Papayas)
sea salt
coconut milk (I use fresh coconut milk from the market, but canned is ok – it’s just a little less delicate)
fresh mint, washed

Peel and open your papaya by cutting it into two faces. Scrape the seeds out with a spoon, and slice it into crescents. Grab a bowl, put as much papaya as you like, then sprinkle over a pinch of sea salt and cover with a handful of fresh mint leaves that you rip up with your hands. Pour the coconut milk over everything, just before eating.
