How to steam mussels and teleport yourself to Thailand.
You will need:
1kg mussels, locally sourced if you can, brushed and rinsed.
1 brown onion, sliced
4 cloves garlic, crushed
1 chilli, diced (optional)
1 bunch of coriander, roots cleaned and reserved
1-2 cups chicken, vegetable, or fish stock
2 stalks lemongrass, chopped roughly and bruised
1 thumb fresh turmeric (optional), skin removed and chopped roughly
Place all of the ingredients except the coriander leaves (you will need to squeeze the lime in, but then throw the whole fruit in too) and stock into a large heavy bottomed saucepan with a lid. Fill with stock until the liquid reaches half way up the mussels. Place onto a medium high heat with the lid on and steam for 10-15 mins until the mussels have completely opened.
Top with fresh corriander leaves and serve immediately.
