SPINACH COOKED IN BACON FAT WITH CRISPY SPECK

Here’s a little simple Sunday brunch-spiration for y’all. As of a couple weeks ago, I spend my Sundays shooting new episodes of Ponytail Journal’s Tastiest Life Possible on YouTube, so these are the days I need a quick and satisfying breakfast to keep me going… ‘Especially with the amount of takes I go through as I’m a newbie at this game.

Anyways, this skillet of goodness was most satisfying. And here’s how you make it:

Get yourself about 6 rashers of good quality smoked bacon, pancetta, or speck. In a heavy based frypan, turn on a high heat and lay your rashers on the pan evenly. Cook on both sides until the fat has crisped up and the bacon is golden in colour. Turn your heat down a little, and place your cooked bacon onto some paper towel to drain. Add a bunch of washed spinach that has been cut into 2 inch pieces to your pan with the bacon fat. Cook the spinach until it has wilted down and season with a pinch of sea salt to taste. To serve, pop some toast in the toaster, lay your cooked bacon onto the spinach, dollop on some creme fraiche or sour cream and paprika, and just eat from your pan with the toast to dip in all of the goodness!

I had this with a tall glass of fresh orange juice and some maple leaf tea that tastes just like maple syrup. It goes really well with the bacon, just like a good stack of pancakes tastes better with some of that crispy stuff and some pure amber sweetness. This dish also works as an excellent side dish to a pasta dish or roast dinner… Do what you like with it, the choice is yours.
