Auntie Agnes taught me how to make this dish out of her home kitchen in central France. She is French Vietnamese and cooks like she was born to do it. One summer visit she showed me how to make this ultra easy but super tasty dish. It’s really a Vietnamese chicken salad that has been adapted to suit the available ingredients that the Vietnamese could access in France. That’s why there are some brilliant hybrid dishes out there like beef noodle salad made with spaghetti or this light cabbage and carrot chicken dish.
