GRANDMA’S POTATO SALAD.

Grandma’s Potato Salad.

You will need:
5-6 new potatoes, sliced into 1cm thick disks
salt and pepper
2 tbsp creme fraiche or sour cream
1 tsp dijon or grain mustard
handful of fresh chives

Boil your potatoes until tender, you can tell they’re ready when you stick a fork in and they feel tender but not crumbly. Drain and refresh under cold water.

Make the dressing in a large bowl by combining the mustard, creme fraiche, and season to taste with salt and pepper. Snip the chives in 2cm pieces with some scissors, then add the potatoes and toss in a folding action with a large spoon. It’s ready to serve!
