Wild Blackberry Crumble
You will need:
3/4 Cup plain flour + 3 tbsp extra
pinch of salt
1/2 – 3/4 C raw sugar + 2-4 tbsp extra
1tsp cinnamon
1 tsp vanilla essence
150g cold unsalted butter
enough washed and diced fruit to fill a 3-4 person baking dish (if you use small fruit like berries, no need to cut)
Preheat your oven to 200C. Fill your dish with the fruit and toss in the 3tbsp flour, vanilla, and between 2-4 tbsp sugar to taste. In a large bowl, cut up your butter into cubes, and add the rest of the flour, salt, cinnamon, and sugar. Bind by cutting with the knife, and once the chunks are small enough, use your hands to rub the mixture into the butter. You should get a crumbly texture that resembles feta cheese. If you feel the crumbs are too wet, add a little more flour. Then scatter on top of the fruit and slide into the oven for 45-55 minutes until the crust is golden and the fruit is bubbling.
Serve with vanilla ice cream, pouring cream, custard, or just by itself!
